Kiwi Mango Smoothie Bowl

This smoothie bowl is made from whole plant foods including fresh fruit, spinach, sesame seeds and chia seeds. A great healthy breakfast to start the day!

Ingredients

Smoothie Bowl Base:

  • 2 chopped frozen bananas
  • 1 cup of fresh spinach loosely packed
  • 1/2 cup of plain unsweetened soy milk or alternative plant milk
  • Optional 1 teaspoon of maple syrup

Toppings:

  • 1 mango
  • 1 kiwi
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of chia seeds

Instructions

Smoothie Bowl Base:

  • Chop 2 bananas and freeze them for ~4 hours ahead of time
  • Add chopped banana, spinach, and soy milk to a blender or food processor and blend until smooth (If you would like your smoothie base to be more sweet, you can add the optional 1-2 teaspoons of maple syrup. I personally think Spinach hides really well in smoothies, and didn't feel the need to do this!)
  • Pour the smoothie base into a bowl and spread evenly with a spoon

Toppings:

  • Cut your kiwi into slices/round discs - then cut them in half to make semi-circle shapes
  • To make a mango rose, first cut your mango in half and use your knife to cut along the edges of one half until the skin can be peeled off with ease
  • Next lay your mango half flat-side down on your cutting board, and cut the mango into thin slices like shown in the picture above
  • Next, begin by taking the smaller pieces at the ends and curl them around each other one by one to piece together your rose, the larger pieces will go on the outsides
  • Use the flat part of your knife to pick your mango rose off the cutting board and place it inside the bowl, then place your kiwi half-circles around it
  • Finally, sprinkle the rest of the bowl with sesame and chia seeds
