Kale Pesto With Sun-Dried Tomatoes

Healthy vegan pesto that is oil and dairy free! It's made with basil and kale to make it extra healthy, but still packed with tons of flavor! Perfect to be spread on anything.

  • 1/2 cup of basil leaves
  • 2 cups of kale
  • 5-6 tablespoons of lemon juice
  • 3 tablespoons of vegan Parmesan cheese http://minimalistbaker.com/how-to-make-vegan-parmesan-cheese/
  • 3 tablespoons of walnuts
  • 2 pieces of sun-dried tomatoes
  • 3-4 tablespoons of water optional


  • Add all of the ingredients to a blender or food processor and blend until it reaches your desired consistency
  • If it is still a bit chunky, you can add the optional tablespoons of water (one at a time) until it becomes more smooth
