Banana Pancakes

Did you know that you can create healthy pancakes with only two ingredients? That’s right, two ingredients.

I’m finding out lately that I love to cook and try new recipes. Unfortunately, I’m also a very busy person and can’t afford to spend hours in the kitchen every night creating meals. This is one of the reasons I like minimal-ingredient recipes. With fewer ingredients comes shorter prep times, shorter cook times, and less time spent in the kitchen! Another reason I seek out minimal-ingredient recipes is because they tend to be much much healthier. My pancakes are made with two ingredients – that’s it. Compare that to boxed pancake mix that you can buy in the store (real label from a popular brand below).

What not to eat

What in tarnations is in this box?! I don’t know what thiamin mononitrate is, do you? What is sodium caseinate? And mono diglycerides? I’m sure they’re not natural, and I’m sure many of them are probably chemicals made in a factory somewhere. I know that one of high fructose corn syrup’s sneaky names is on this list, and I also know that I don’t want any of it going in my body. Healthy baking/healthy desserts have become another fun hobby of mine, and I seek out minimal-ingredient recipes there for the same reason. Most baking recipes come with an ingredient list 20 items long. I don’t bake that often so keeping all those ingredients around is expensive!

Plus why do I need to eat cookies that have 20 ingredients (sugar taking up most of them) when I can east delicious no-sugar-added cookies made from three ingredients that taste just as good?

At this point I’ll assume I’ve convinced you that minimal-ingredient recipes are the way to go, so let’s move on to the instructions for these banana pancakes!

Healthy vegan banana pancakes that have less than 5 ingredients!

Ingredients
  • 2 flax eggs (1 flax egg = 1 tbs of flax meal + 2.5 tbs of water mixed)
  • 1 ripe banana
  • [Optional] ½ teaspoon of cinnamon
  • [Optional] ½ teaspoon of baking soda
Instructions
  1. Combine all ingredients in your blender and blend until smooth for the batter
  2. Grease a pan and turn on medium-high heat
  3. Pour your batter into the heated pan forming small circles for your pancakes
  4. Let one side cook for a bit and then flip
  5. Repeat until all your batter is gone
  6. Sprinkle with your favorite toppings – almond butter, peanut butter, fresh fruit, granola, coconut flakes, whatever!
